Bob’s Red Mill Gluten Free Brownie MixA Low-fat Version

If you like chocolate, but don’t want all the fat and calories I found an easy chocolate brownie recipe that you might enjoy. I went to Whole Foods market and bought Bob’s Red Mill Gluten Free Brownie Mix. (Gluten free means it’s made without wheat products). This recipe is also dairy free. I personally try to limit the gluten and dairy in my diet for health reasons.

The directions call for ¾ cup or 1 ½ sticks of melted butter. That’s over 2400 calories! Instead I used ¾ cup of unsweetened organic applesauce, which is only 150 calories. A huge savings! You simply mix in the applesauce, an egg, vanilla extract and warm water and bake for 25 minutes. It says to use an electric mixer, but a spatula worked for me, since I wasn’t using butter. I also added a ¼ cup of raw chopped walnuts, which gives a different texture to its smooth consistency. It’s yummy, fudgy, gooey and you won’t feel guilty for having an extra piece.
