A friend of mine made these while over her house and I could not believe this was the same vegetable that I dread eating. Even her two little girls were grabby hands over the kale chips. I know what you are thinking, but let me assure you that you will down these crunchy kale chips like nobody’s business. They are better and better for you than potato chips and it’s probably the only way you are going to get your kids to eat kale. I ate an entire bunch in one sitting myself; they were too delectable. Would I ever steer you wrong? I’d say get one bunch of kale, but you are going to love these so much that it’s safer to get two bunches, because trust me, you WILL be making a second batch. Here’s what you’ll need:
- 1 bunch of kale, stemmed removed and coarsely torn by hand
- 1 Tbs apple cider vinegar
- 2 Tbs olive oil
- 1 tsp salt
Preheat oven to 375F. In a large bowl mix all ingredients together and coat kale well. Line a roasting pan with tin foil and spread kale evenly over pan. Bake for about 30 minutes or until the kale is crunchy to touch.

I’ve heard of these before but never seen a recipe, thanks for putting one up. Q: What kind of kale did your friend use?

I used green kale, but any kind will work.

Hmmmm. These sound great - I’m getting ready to start the SP Cleanse, and I think these and baked sweet potato fries will be a HUGE help when I feel like “cheating”. THANK YOU!!!

I tripped over a youtube video dealing with kale chips. I’ve made them several times before but they were always bitter. The person in the video made them with a dehydrator and since I have one, I used the above recipe but with the dehydrater. They are not totally done yet but I tasted 2. I’m in agony because they are not done and I want to eat them all NOW. Somehow the chemical reaction with the cider vinegar make them not bitter but sweet! I tasted them raw, when I mixed it all together and it was potent, like a pickle can be. Good, but potent. Now, they are sweet. I’m delighted. I will try oven cooking next but now with the added apple cider vinegar I have high hopes they will not be bitter. I’m so glad I stumped on your recipe. Thank you! Now I can mindlessly eat when watching a movie. Muahahahahaha

I think 1/2 hour is way too long to bake these. 10 minutes is perfect in my oven. My husband won’t eat Kale, unless it is prepared this way. He loves these delicious “chips”. We don’t eat salt (high blood pressure) and this recipe is good even without the salt!
