This recipe sounds more like a pet name than it does a dessert.

  • 3 oz butter
  • 3 oz sugar
  • 1 egg
  • 5 oz flour, plain or self-rising
  • 1 tsp baking powder (leave this out if using self-rising flour)
  • 1 lemon
  • 2 oz candied cherries
  • 2 tsp milk
  • Paper baking cups

Preheat oven to 350 degrees. Cream together the butter and sugar using a wooden spoon until mixture becomes light and creamy. Beat in egg. In second bowl, sift flour and baking powder. Grate lemon rind and add to flour. Cut cherries into quarters and mix with flour. Put paper baking cups on your baking tray. Add flour to the creamed mixture in first bowl. Stir well so that all ingredients are thoroughly mixed. Add 2-3 tablespoons of milk to make the mixture just soft enough to drop from spoon. Put a big teaspoonful into each paper cup. Bake for 20-25 minutes.
