This is an easy chocolate chip cookie recipe that calls for 1 cup butter-flavored shortening, but I replaced it with 1 cup organic applesauce to cut the fat. Your cookie will be fluffy and moist if you use the applesauce, so the trick is to put it in the refrigerator to harden the cookie up. You can also be creative and use white chocolate chips or peanut butter chocolate chips or even MnM’s for a fun twist.
- 1 cup butter-flavored shortening (or 1 cup applesauce)
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 eggs
- 2 tsp. vanilla
- 2 14/ cup white whole wheat or unbleached all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chopped pecans (optional)
- 2 cup (12 ounces) chocolate chips
In a large bowl mix together the shortening (or applesauce), sugars, eggs and vanilla. Add the flour, baking soda and salt; stir to thoroughly combine. Mix in the nuts and chocolate chips.
Drop the dough by tablespoonfuls onto lightly greases or parchment-lined baking sheets. Bake the cookies in a preheated 375 degree F oven for 8 to 10 minutes for chewy cookies, or 11 to 13 minutes for crisps. Remove the cookies from the oven and let cool completely on a wire rack. Makes 4 1/2 dozen chewy chocolate cookies.
