• 1 cup butter or shortening
  • 2 cup brown sugar
  • 2 eggs
  • 3 1/4 cup flour
  • 2 tsp cream of tarter
  • 2 tsp baking soda
  • 1 cup shredded coconut

Heat oven to 350 degrees F. Cream shortening and sugar. Add eggs and beat well. Sift flour, cream of tarter, and baking soda. Add to cream mixture; blend well. Add coconut. The mixture will be very thick. Form into balls the size of a walnut. Place on a greased cookie sheet and flatten with a fork. Bake for 9-10 minutes.
