I know what you’re going to say. What is a girl like me who is on a cleanse doing making a baked ziti? Crazy, right? Just so we’re clear it wasn’t for me, so relax. However, I’m not gonna lie; the temptation to devour the entire thing in 8.7 seconds was hard resist, but I managed. Technically this would be called a baked penne, since no ziti was harmed in this production, but that just doesn’t sound right. So, baked ziti it is!
Baked zitis are one of those dishes that are so easy to make, feeds a bunch of hungry people and is super cheap. I used 5 ingredients all from Trader Joe’s and the entire cost was about $12. Use a large glass baking pan and you can serve at least 12 people. If you want to make it a bit healthier you can add fresh zucchini and mushrooms and use lower fat cheeses. I personally am never for eating lower fat cheeses. I figure if you’re going to eat cheese, eat it the way it was intended.
Here’s the ingredients you’ll need:
- 1 bag of Organic brown rice penne pasta
- 1 can of marinara sauce
- 1 tub of ricotta cheese
- 1 bag of mozzarella cheese
- 1 bag of meatballs
Preheat oven to 350 degrees. Cook pasta according to the package. Cook the meatballs according to the package and cut each one into quarters. Drain pasta and put back in large pot, add sauce, ricotta, half of the mozzarella cheese and meatballs. Mix well and put into large glass pan. Top with remaining mozzarella and bake until cheese is melted.
