- 3 cod fillets, seasoned with salt, pepper, and Simply Organic Garlic n’ Herb
Heat a medium skillet with 1 TBS olive oil and cook cod until done, about 2-3 minutes each side. Top with citrus salsa and serve with a side of mixed greens.
For the salsa:
- 1 orange, diced
- 1/4 grapefruit, diced
- 1/4 cup red onion, finely chopped
- 1 handful cilantro, finely chopped
- 2 small garlic cloves, minced
- Squeeze of fresh lime
- Salt
- Pepper
For the salad:
- 4 cups mixed field greens
- cherry tomatoes, sliced lengthwise
- 1 garlic clove, minced
- 6 basil leaves, thinly sliced
- 1 Tbs olive oil
- Salt
- Pepper
Toss salad ingredients in bowl and serve along side fish.
