• 3 cod fillets, seasoned with salt, pepper, and Simply Organic Garlic n’ Herb

Heat a medium skillet with 1 TBS olive oil and cook cod until done, about 2-3 minutes each side. Top with citrus salsa and serve with a side of mixed greens.

For the salsa:

  • 1 orange, diced
  • 1/4 grapefruit, diced
  • 1/4 cup red onion, finely chopped
  • 1 handful cilantro, finely chopped
  • 2 small garlic cloves, minced
  • Squeeze of fresh lime
  • Salt
  • Pepper

For the salad:

  • 4 cups mixed field greens
  • cherry tomatoes, sliced lengthwise
  • 1 garlic clove, minced
  • 6 basil leaves, thinly sliced
  • 1 Tbs olive oil
  • Salt
  • Pepper

Toss salad ingredients in bowl and serve along side fish.
