I’ve been following (and by following I mean loosely) the Paleo diet for the last year. It’s really the only diet that doesn’t feel like one AND gets you lean…fast! Why? Because you get to eat fat and fat equals flavor. The Paleo diet is simple: think meats and veggies with some fruit, nuts, seeds, healthy fats and nothing process, no dairy, no legumes (that means no peanuts or soy) and most certainly no refined sugars. I’ve never had a problem eating Paleo and whipping up meals is simple and inexpensive.
Here’s one I just threw together in a pan. And you don’t even have to chop anything, if you don’t like. Pre-cut veggies are so easy to find these days. I bought all my ingredients from Trader Joes. This is brainless really, but what makes any meal worthwhile is the spices you choose. Go get a few fun ones at a local spice shop. And specialty salts, as well. Trust me, it’s worth the little extra cash and will keep you palate from getting bored.
In a pan on high heat I cooked one package of Grass Fed Angus Beef (85% lean/15% fat) with half a bag of mushrooms, 1/4 bag of broccoli and 1 1/2 chopped zucchinis. I seasoned with salt, black pepper, smoked paprika and my sexy spice of Black Dust Coffee & Spice Rub from a local spice shop. When the meat was cooked and the veggies to my liking and finished with a squeeze of some fresh lime juice and some cubed avocado. Simple! If you want more greens, just place on top of your favorite green: spinach, kale, romaine, etc.
Here’s other things you can do with this simple Paleo recipe:
- Make lettuce wraps.
- Add it to the inside of an omelette or just scramble some eggs in for breakfast.
- Add marinara to make a meat sauce for atop some spaghetti squash.
