- 1 cup vegetable oil
- 1/3 cup cider vinegar
- 1/3 cup sugar
- 1 tsp celery salt
- 1/4 tsp ground black pepper
- 1 lb fresh spinach, torn
- 1 head romaine lettuce, torn
- 2 Granny Smith apples, cored and cut into 1-inch peices
- 1-15 ounce can mandarin oranges, drained
- 1/2 cup cashews, toasted and coarsely chopped
- 1/4 cup crumbled goat cheese (optional)
In a small bowl whisk or blend together oil, cider vinegar, sugar, celery salt and pepper.
In a large bowl combine spinach, romaine, apples, oranges and cashews. Toss with cheese, if using. Serves 12.
