• 1 cup vegetable oil
  • 1/3 cup cider vinegar
  • 1/3 cup sugar
  • 1 tsp celery salt
  • 1/4 tsp ground black pepper
  • 1 lb fresh spinach, torn
  • 1 head romaine lettuce, torn
  • 2 Granny Smith apples, cored and cut into 1-inch peices
  • 1-15 ounce can mandarin oranges, drained
  • 1/2 cup cashews, toasted and coarsely chopped
  • 1/4 cup crumbled goat cheese (optional)

In a small bowl whisk or blend together oil, cider vinegar, sugar, celery salt and pepper.

In a large bowl combine spinach, romaine, apples, oranges and cashews. Toss with cheese, if using. Serves 12.
