I made this recipe yesterday on the fly; it is so simple to prepare. I wanted to add chopped green onions, but didn’t have any on hand. If you make this recipe make sure you add scallions. A word of advice: cut the corn off in a bowl so the kernels don’t fly off in every direction. Serves 8.
- 4 pieces of fresh sweet corn, cut off the cobb
- 1 can black beans
- 1 tomato, chopped
- 2 Tbs cilantro, chopped
- 1 clove garlic, crushed and finely chopped
- 3 green onions, chopped
- juice of one lime
- salt and pepper to taste
