If you’re in a bind and don’t have time to make a fancy salad this simple spinach salad will certainly impress your dinner guests. It took me less than 5 minutes to make and less than 5 seconds to devour. Sometimes we over think things and forget that it’s the simple pleasures in life that delight us the most. Here’s what you’ll need for this salad:
For a single serving:
2 cups organic baby spinach
1/2 cup sugar plum cherry tomatoes, sliced longwise
1 garlic glove, finely chopped
2 basil leaves, sliced thin
pinch of sea salt
a couple twists of fresh ground pepper
olive oil, to taste
Toss in a bowl and enjoy! Serve along side chicken or shrimp or as a preamble before pasta.
Cook’s note: When slicing basil first roll the leaves together and then thinly slice using a sharp knife.
