- 1 1/2 cup packed fresh mint leaves
- 3/4 cups packed fresh basil leaves
- 1/4 cup toasted walnuts
- 1 tablespoon freshly grated orange zest
- 2 tablespoons lemon juice
- 1 large clove garlic, quartered
- 1/4 teaspoon salt
- ¼ teaspoon fresh ground black pepper
- 3 tablespoons extra-virgin olive oil
Place first 8 ingredients (through pepper) in a food processor. Pulse a few times to blend. With processor running, slowly drizzle in olive oil until a smooth paste is formed. Mix with chilled pasta and chopped fresh strawberries for a fresh summer meal!
