This recipe can be made a day ahead of time and would be perfect for a summer BBQ, picnic or potluck.
- 6 cups broccoli florets
- 6 cups cauliflower florets
- 1 small red onion, chopped
- 1 clove garlic, minced
- 1 (.75 ounce) envelope salad dressing
- 1/4 tsp crushed red pepper flakes
- 1 cup light mayonnaise
- 1/2 cup cider vinegar
- 1/4 cup sugar
- 3/4 cup shredded Cheddar cheese
- 1 (16 ounce) package bacon, crisp-cooked, drained and crumbled
- 1/3 cup salted, shelled sunflower seeds
In a large bowl toss together broccoli, cauliflower, onion, garlic, salad dressing mix and red pepper flakes.
In a medium bowl stir together mayonnaise, vinegar and sugar. Add to vegetable mixture. Toss to coat. Gently stir in cheese, bacon and sunflower seeds. Cover and refrigerate 2 to 24 hours. Serves 12.
