Last night I had a fabulous collaborative Hanukkah dinner with friends. I made the chicken matzoh ball soup, potato latkes and applesauce. I will share all my recipes that night starting with the easiest: fresh, organic and super simple homemade applesauce. This recipe takes me no longer that 15-20 from start to finish, plus time to chill unless you like your applesauce warm like I do! Here goes:
- 1 bag organic apples of your choice
- cinnamon
- lemon
- agave nectar
- sea salt
Cut your apples from their core, into about 4 to 5 evenly sliced pieces, leaving the skin on. Put into large flat pan with 1 Tbs water. Add a pinch of sea salt, cinnamon, lemon juice and agave nectar to taste. Cover and heat on medium until the apples become soft. Drain excess water and spoon into food processor until desired consitancy is reached. Taste and adjust seasonings, if necessary.
