Trader Joe’s now has canned organic pureed butternut squash, which makes whipping up butternut squash soup a breeze! I love it; no peeling, chopping or cooking! I also threw in some leftover watercress and arugula, but that’s completely up to you. This recipe is vegan, vegetarian, dairy and gluten free. Here are the ingredients for this butternut squash soup.

  • 1 can of Trader Joe’s Organic Pureed Butternut Squash
  • 2 cups vegetable broth
  • 2 scallions, chopped
  • 1 garlic, crushed and minced
  • 1/2 apple, chopped
  • 1/2 jalapeno pepper, finely chopped
  • 1 tsp olive oil
  • 1/2 tsp agave nectar
  • dash of nutmeg
  • salt and pepper to taste

Add everything to a pot and cook until simmering. Garnish with sliced apples and finishing salt.
